There are a few things we can check:
Ensure that you have given Symbol-It permission to use both the microphone and speech recognition. You can check this in the Settings App under Privacy → Microphone and Privacy → Speech Recognition.
Because Symbol-It uses Siri for the speech translation, be sure your Siri permissions are activated in both your iOS device settings and the Symbol-It app settings.
Symbol-It can't translate what you're saying into symbols unless Siri is enabled for your device. To turn on Siri, you need to enable one of the three following settings in the Settings App:

Symbol-It subscribers received error codes today from the App Store falsely stating that their subscriptions were cancelled. This was due to Apple releasing an incomplete update despite SymbolSpeak’s best efforts to halt it. Please be advised that subscriptions were not cancelled and that Symbol-It will continue to work properly.
